Burgundy’s greatest treasures lie in its world renowned wines and unrivalled gastronomy. Snails, truffles, blackcurrants and wine as well as seasonal vegetables from the market, can all be included in these fascinating hands on Burgundy cooking classes. This two-day Cooking Class and Wine Tour combination in the gastronomic heart of Burgundy is just perfect for Food and Wine lovers. You will have the rare chance to learn with two talented Burgundian chefs, The first day you will be working with a chef known for his innovative modern French cuisine created with the freshest of seasonal, local ingredients. Working in his professional kitchen, you will experience a fascinating interactive MasterClass with the addition of some of his own personal tips and tricks. You can enjoy his house aperitif and guess its secret ingredients, paired with foie gras toasts on home made bread, before enjoying the three course lunch you will have cooked together in the kitchen. The afternoon will be spent exploring the vineyards of the historic Côte de Nuits, famed for its delicious pinot noir wines, visiting the cellars and tasting wonderful wines from both barrel and bottle.
The second culinary experience is in the Burgundian home of our other great chef in his recently renovated old family house in a famous wine village. His talents lie in the rich and hearty cuisine of the region so with him you will create some delicious typically Burgundian ‘peasant’ cuisine, such as Coq au Vin, Escargots Bourguignons, or Oeufs en Meurette. He sometimes works with traditional ingredients in a less classic way as he loves to change things around in tune with the seasons. Before settling down to our three course lunch which you will have helped to cook, you can taste typically Burgundian Gougères (warm cheese choux pastries) with a glass of Cremant de Bourgogne (sparkling wine), in the garden if fine. After lunch we’ll take the scenic back road through the countryside en route for the very picturesque Côte de Beaune, south of Beaune, well known for its superb white chardonnays and light and fruity pinot noirs, where you’ll spend the afternoon. What could be more enjoyable than working in a professional kitchen or the chef’s home in a French village? Although all cooking classes are with french chefs, these Burgundian cooking classes will be held in English. Both chefs take great pride in welcoming you and sharing their passion for good food. There’s no better way to learn than hands-on and their teaching styles, whilst both very different, allow you to see for yourself the essence of french cooking. After a welcome coffee and introductions your chef will take you through the menu and you will then begin assisting him to prepare the delicious three course menu.
As an alternative, there is a third cooking class option - French/Japanese fusion cuisine, which takes place at a renowned restaurant on the outskirts of Beaune. This Masterclass with your chef is held in a space specially created for the classes in his restaurant kitchen and while the kitchen brigade is hard at work preparing for service, you will be creating your own lunch which makes it rather unique! At the end of the class, you’re served aperitifs and a three course lunch with wine at a table overlooking stunning vineyard landscape. Please Note: This Class requires a minimum of 4 attendees.
